Green Egg Curry
(my Mom's recipe)
Ingredients -
8 boiled eggs
1/2 coconut approx. 3/4th cup
5 green chillies
2 medium onions
1/4 tsp cumin seeds
1" ginger
3 fat cloves garlic
1 pinch mustard
a small ball of tamarind
1 big bunch coriander leaves
1 tomato
few curry leaves
1 beaten egg
Method -
Grind to a paste coconut, chilies, 1 onion, cumin, ginger, garlic, mustard, tamarind and coriander leaves with a little. Fry 1 onion & curry leaves in some oil. Now add tomato and fry for 2 mins. Add the ground paste and fry for 3-4 mins on medium flame. Add water for gravy (approx. 2 cups). When it comes to a boil, add the beaten egg and mix. After a min. add the whole boiled eggs
